Sharon Flynn is an incredibly knowledgeable and talented wild fermenter, author of two best sellers on the subject, including one dedicated to drinks and founder of the Fermentary for which this new batch was created.

I met Sharon at a no/low-alcohol tasting. We both had stands, and as the day was winding down, I asked visitors which producer had wowed them the most. They all pointed me toward The Fermentary. Before packing up, I went over to taste. And, wow, they weren’t wrong. 

Sharon’s no/low drinks are like nothing I’d ever tasted in that category: complex, layered, naturally rich in flavour and texture. No shortcuts, no gimmicks, just pure, alive drinks that could make even the most seasoned winemaker take notice.

We got into a conversation, and when she tried Pique, she lit up. She loved the drink, the story behind it, and the history of this humble drink - something that rang truth to her, just like her drinks did to me. She had never heard of or tried piquette before. For her, it was a discovery—a reminder that there’s always more to learn, more to taste, more to create. She invited me to her shop on Queens Parade, this beautiful, witchy wonderland of jars, cultures, and ingredients. When I finally arrived, we cracked open a bottle of Pique at the table, snacked on pickles, sampled her fermented sauces, and dived into what became the beginning of a real friendship and mentorship.

Under Sharon’s guidance, my world of fermentation blew open. I found myself brewing everything from kombucha to kvass, wild brews that sparkled and bubbled with life. Her support for Pique went beyond mentorship; it was encouragement in its truest form. Eventually, we started talking about a collaboration, and she asked if I’d create a small-batch piquette just for The Fermentary.

This limited release isn’t just a drink; it’s a meeting of our shared beliefs and passions. It’s light, crisp, and delicious, made to be enjoyed for its own sake as much as for the tradition it carries. Piquette itself is an old tradition—a way to keep and savour what remains. This drink celebrates exactly that: making something beautiful from what’s left, a drink that’s both modest and extraordinary, filled with character.
